When membranes of both cells fuse, the phosphate heads of phospholipids interact with each other and with water on the surface of the cell membrane, whereas fatty acid chains interact with each other in the interior of the bilayer.

A phospholipid is a molecule composed of one hydrophilic (polar) phosphate head and two hydrophobic (non-polar) fatty acid chains.

When two cell membranes fuse, the more energetically stable conformation is as a lipid bilayer.

In a lipid bilayer, phospholipids are arranged so phosphate heads interact with water molecules on the surfaces of the cell membrane, whereas hydrophobic fatty acid chains face inwards and interact with each other.

In conclusion, when membranes of both cells fuse, the phosphate heads of phospholipids interact with each other and with water, whereas fatty acid chains interact with each other.

When the membranes are fused, the polar parts of the phospholipids, which is the head will interact with the water surroundings of the other cell phospholipid.

The non-polar parts of the phospholipids from one cell which are the tails will interact with those parts that repel water surroundings in the other cell phospholipid.

This results into a two sheets of phospholipids arranged tail to tail where the hydrophobic tails interact with one another forming the interior of the membrane. The polar head attach to the fluid inside and outside the cell.

Explanation:

The cell membrane is composed of Phospholipids, cholesterol and proteins. The phospholipid has two main parts; the head and the two tails.

The head of a phospholipid is hydrophilic. This means it is attracted to water surroundings.

The tails of a phospholipid are made of fatty acids which are hydrophobic. This means they repel water surroundings.

The head of a phospholipid molecule is the polar part which has a phosphate group that is negatively charged and attracts to water molecules in the membrane's environment. They face outwards to attach to the liquid parts.

The non-polar fatty acid tails face away from water environments to only interact with other non-polar molecules. They are located away in the membrane interior to avoid the surrounding water environments to only attach to non-polar environments in the membrane.
